Instructions
First, place the sesame seeds in a strainer and rinse twice under running water. Let them drain and spread them out on a towel to dry. Set aside.
In a bowl, whisk together the olive oil and sugar very well. Then add the raki, orange zest, cinnamon, clove, and salt.
Next, dissolve the baking soda in the orange juice, stir until it froths, and pour it into the bowl with the mixture.
Combine the flour with the baking powder and gradually add it to the bowl, kneading well until you have a soft and pliable dough.
Divide the dough into 20–25 g balls and shape them into small sticks or cookies. Press them into the sesame seeds to coat.
Transfer the cookies onto a baking tray lined with parchment paper and bake in a preheated oven at 180°C (356°F), using top and bottom heat, for about 25–30 minutes.
Once ready, allow them to cool and store in an airtight container.

200 ml Elasion Organic olive oil

150 ml orange juice
40 ml raki (or cognac or rum)
A pinch of salt
½ teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
