GREEN BEANS AND OLIVE OIL STEW

Execution

Chop the edges off of the green beans.

In a pot heat the olive oil and sauté the finely chopped onion.

Add the potatoes, the zucchinis chopped and mix until golden.

Add the green beans, mix softly and add the wine until the alcohol evaporates.

Add the tomato paste and mix. Then add the grated tomatoes and the parsley.

Add the salt and pepper and a cup of hot water.

Cover the pot with the lid and cook in medium heat for 40-50 minutes.

Remove from the heat and drizzle with extra olive oil and freshly ground pepper.

1 kilo green beans, fresh or frozen

100ml Cretan extra virgin olive oil Elasion

1 onion

500g potatoes

3 zucchinis

50ml white wine

3 ripe tomatoes, grated

1 tablespoon tomato paste

2 tablespoons parsley, chopped

Salt

Pepper
