Preparation
In a bowl, pour the olive oil and sugar and whisk together.
Next, add the eggs and salt, and mix well.
Add the yogurt and orange zest, and continue mixing.
Dissolve the baking soda carefully into the orange juice until it starts to fizz, then pour it into the mixture.
Combine the flour with the baking powder and sift.
Gradually add the flour mixture into the batter while continuously mixing until fully absorbed.
Butter and flour a round baking pan, then pour in the mixture.
Let it rest on the counter for 20 minutes before baking, so the air escapes and it rises evenly.
Then bake in a preheated oven at 180°C (350°F) for about 50–55 minutes.
Do not open the oven before 45 minutes have passed. Check doneness by inserting a toothpick — it should come out clean.
Let the cake cool completely before removing from the pan. Transfer to a serving platter and sprinkle generously with powdered sugar.
