Execution
Put the split peas in a strainer, pour the water over it and let it drain.
In a pot we heat the olive oil, add the onion chopped in thick slices and the grated potato and sauté.
Add the split peas and stir them until caramelized.
Add 1,5l hot water and boil in medium heat.
Stir occasionally and add a little hot water if it is needed.
When the split pea is melted and the water is evaporated, it is ready.
If you want to make it creamier, you can blend it in food processor or with a hand mixer.
Serve it with finely chopped spring onions and cherry tomatoes and, of course, with Elasion Organic Extra Virgin olive oil.
