Preparation
Rinse the yellow split peas thoroughly in a colander under running water. Let them drain well.
In a pot, heat the olive oil and sauté the sliced onion and grated potato.
Add the split peas and stir until they become glossy.
Pour in about 1.5 liters of hot water and simmer over low heat.
Stir occasionally, and if needed, add a little more hot water.
When the split peas have completely softened and absorbed the water, the fava is ready.
For a creamier texture, you can blend it in batches using a food processor or an immersion blender.
Serve topped with finely chopped fresh onion, diced tomato, and of course, a generous drizzle of Elasion Organic extra virgin olive oil.
