Instructions
In a bowl, add all the ingredients: flour, yeast, sugar, salt, and olive oil. Gradually add the water while mixing very well. The mixture should become a thick batter. Cover the bowl with a towel and let it rest for 30–45 minutes, depending on the temperature of the room.
Meanwhile, toast the sesame seeds in a pan until fragrant. Once slightly cooled, add the sesame and walnuts to a food processor and crush them together. Set aside to sprinkle over the loukoumades.
Once the dough has risen, heat a generous amount of Elasion PDO Sitia Extra Virgin Olive Oil in a deep pot.
Place the bowl with the batter, a glass of water, and a spoon near the pot. Wet your hands, grab a handful of batter, and squeeze a small ball out between your thumb and forefinger. Dip the spoon in the water and cut the ball into the hot oil. Fry the loukoumades, stirring constantly so they crisp evenly on all sides.
Transfer them onto a platter lined with paper towels. Remove the towel and drizzle the loukoumades generously with honey. Sprinkle with the crushed sesame-walnut mixture and plenty of cinnamon.

2 tablespoons walnuts
Cinnamon
4 tablespoons honey
